Title: Stir Fry Poached Pears

4tbButter
4lgPears, cored, cut in 8ths
1/4cHoney
1/4cWater
1/2 Lemon, juice from
1/2 Lemon, julienned zest from
1/2 Orange, juice from
1/2 Orange, julienned zest from
1/4cWhite wine
2tsCornstarch
2tbOrange liqueur
1tsVanilla extract

Melt the butter in a wok or heavy skillet over MODERATE heat.

Stir fry the pear sections in the butter for one minute. Mix the honey and 1/4 cup water, the lemon and orange juices and zests and the white wine and then add the mixture to the pears. Bring to a boil. Turn down to a simmer and toss gently until the pears are soft, about three minutes. Remove the pears with a slotted spoon, leaving the liquid in the pan.

Dissolve the cornstarch in the liqueur and vanilla, and then stir into the liquid in the pan. Simmer until lightly thickened. Pour over the pears and serve warm.
